These blends pair cocoa with bases such as black tea, rooibos and spices, giving flavours that range from sweet and dessert-like to deep and roasted. Cocoa nibs and shells, made from the cocoa bean, can be brewed on their own for a naturally caffeine-free infusion with a cocoa aroma, or added to other blends. Chocolate rooibos is also caffeine-free, while chocolate black tea contains caffeine from the tea leaf.
To brew, steep chocolate-flavoured teas in freshly boiled water, adjusting time to the base: three to five minutes for black tea blends and up to eight minutes for rooibos and cocoa-shell infusions. A splash of milk brings out the chocolate character in stronger blends.
